Celebrate autumn in Colorado with a new recipe highlighting the state’s seasonal produce. The Colorado Department of Agriculture has shared its October Colorado Proud Recipe of the Month: a beet and carrot salad featuring locally grown ingredients.

The dish brings together red, golden, and candy-striped beets with Colorado carrots to reflect the colors seen in the state’s fall landscapes. Goat cheese from Haystack Mountain dairy is included for a creamy element, while arugula adds freshness and a balsamic vinaigrette completes the salad.

“Every bite is Colorado on a fork: fresh, bold, seasonal, and rooted in local pride,” said CDA staff.

The recipe encourages consumers to source their ingredients locally by visiting farmers markets listed in the Farm Fresh Directory, which is available in both English and Spanish. Through initiatives like Colorado Proud, residents can connect with producers across the state.

For those interested in wine pairings, the department suggests serving the salad with Governor’s Cup #1 Rated 2024 Colorado Red from OBC Wine Project. According to the department, this wine pairs well due to its ability to balance the sweetness of root vegetables and complement their earthy flavors.

A non-alcoholic pairing option recommended is Strongwater Sparkling Apéritif. This beverage is made using Rocky Mountain water blended with citrus and herbs for a European-style aperitif experience without alcohol.
