This March, Colorado Proud is highlighting the state’s egg producers with a featured recipe: the Egg Flatbread Wrap. The initiative aims to showcase the quality and freshness of Colorado eggs, produced by both large commercial farms and smaller family operations.
Egg producers in Colorado play an important role in the agricultural sector, which contributes over $47 billion annually to the state’s economy. Despite recent challenges such as avian influenza, these farms have shown resilience and continue to support local food systems.
According to Colorado Proud, “Our state’s egg producers are a vital part of the Colorado Proud community, supporting an agricultural industry that contributes over $47 billion annually to our economy. Despite recent challenges like avian influenza, Colorado’s egg farms—ranging from large-scale commercial operations to smaller family-run backyard flocks—remain resilient.”
Eggs are described as a complete protein source. Each large Colorado egg contains about 6 grams of high-quality protein and all nine essential amino acids. Eggs also provide nutrients such as Vitamin D for bone health, choline for brain function, and antioxidants including lutein and zeaxanthin that help maintain eye health.
Colorado residents interested in purchasing local eggs can use resources like the Farm Fresh Directory or look for the Colorado Proud label at grocery stores. “Want to bring this harvest home? Find your nearest farmer’s market in our Farm Fresh Directory—available in English and Spanish. Explore Colorado Proud to connect with the producers who grow and craft the food that makes meals like this possible and look for the Colorado Proud label at your grocery store to buy local,” states Colorado Proud.
The Egg Flatbread Wrap recipe includes eggs, cottage cheese, seasonings, and optional sandwich toppings such as ham, turkey, cheese, mayonnaise, mustard, tomato, lettuce, and potato chips. Instructions guide users through blending ingredients, baking the flatbread base, adding fillings of choice, rolling it up tightly for serving.
For beverage pairings with this dish, Aspen Peak Cellars Blanc de Blancs sparkling wine is suggested for brunch occasions. For non-alcoholic options, Pete’s Kombucha offers flavors like blueberry lavender and pineapple mango.
The Colorado Department of Agriculture employs more than 300 staff members across 36,056 farms and ranches statewide. The department supports programs aimed at connecting consumers with local products and improving pollinator health through efforts such as honey bee surveys. It was founded in 1933 and continues its mission to strengthen agriculture in Colorado by ensuring food safety standards are met while promoting environmental stewardship (source). Commissioner Kate Greenberg leads these efforts (source).
