Governor’s Plate competition returns to showcase local food trucks at Colorado State Fair

Five food trucks from around Colorado have been chosen to compete in the 2025 Governor’s Plate event at the Colorado State Fair. The competition is scheduled for August 26, 2025, at the State Fairgrounds in Pueblo.

The Governor’s Plate contest highlights local agriculture by requiring participating food trucks to use ingredients grown or produced in Colorado. All competing trucks are members of Colorado Proud, a program that supports businesses using locally sourced products and promotes the state’s agricultural economy.

For this year’s event, chefs must feature either Colorado-grown sweet corn or honey produced within the state. Five food trucks will present their dishes to guest judge Brother Luck, who is stepping in for Gov. Jared Polis. Event attendees will also vote for a People’s Choice Award.

“We know this is one of Governor Polis’s favorite events, not just at the fair, but all year long, and he’ll be missed,” said State Fair general manager Andrea Wiesenmeyer. “However, we are absolutely thrilled to have the incredible chef Brother Luck step in as our guest judge! We know he’ll bring a fantastic perspective, and we can’t wait to see which delicious dish he chooses for the Governor’s Plate award.”

Brother Luck is a chef based in Colorado Springs with more than twenty years of experience. He has opened several restaurants and has appeared on national television shows such as Top Chef and Chopped.

The five food trucks competing are:

– Mother Smothers (Pueblo), serving Pueblo green chile cheesy and creamy corn dip with corn chips.
– Stoke Pizza (Pueblo), offering wood-fired pizza made with local ingredients including Colorado Proud honey.
– MunchKings (Pueblo), preparing enchiladas with corn tortillas topped with green chile.
– Mollie & Co (Pueblo), presenting honey-sweetened green chile and peach ice cream served with dark chocolate.
– MC2 Ice Cream Truck (Arvada), creating honey-goat cheese cheesecake ice cream swirled with freeze-dried corn streusel in a honey cornbread cone topped with pine nut brittle and Bing cherry pearls.

Tickets for Governor’s Plate can be purchased through the official Colorado State Fair ticketing website. Additional tickets for concerts, rodeos, and general admission are available online at etix.com, by phone at 1-800-514-3849, or directly from the box office. Concert tickets bought before August 21 include entry to the fair.
