The Pueblo chile, a staple of southern Colorado agriculture, is featured as the main ingredient in this month’s Colorado Proud Recipe of the Month. The recipe highlights the Pueblo Chile Slopper, a dish known for its burger smothered in green chile sauce, cheese, and onions.
The Pueblo chile is recognized for its smoky heat and flavor, grown in the Pueblo region’s fields. The slopper is described as a comfort food with deep roots in local tradition. According to the release, “this juicy burger, smothered in bold green chile sauce and topped with cheese and onions, is a rite of passage for every Colorado foodie.”
Locals are encouraged to source fresh chiles from area farms such as Milberger Farms, DiSanti Farms, or Musso Farms. The chiles are also available at retailers along the Front Range like The Chili Guys and at roadside vendors in Denver.
Chef Jennifer Martinez-Avila shared her version of the Pueblo Chile Slopper recipe. It includes roasted Pueblo green chiles, pork shoulder (optional), onion, garlic, olive oil, gluten-free flour, broth, cumin, oregano, ground beef patties (or alternatives), buns, cheese blend and onions. The preparation involves making a green chile roux that can be served over various dishes or used as a topping for the slopper itself.
For those looking to pair beverages with their meal, recommendations include Snowy Peaks Cabernet Franc wine or non-alcoholic options from Grüvi.
