Join CSU Extension Pueblo County Family and Consumer Science Agent, Laura Griffin to learn more about the Mediterranean Diet! Although it is called a ‘diet’, the Mediterranean Diet is not about cutting calories and restricting foods like many popular diet trends in America. Instead, it is a way of life that involves enjoying a wide variety of whole, nourishing foods with friends and family, as well as practicing an active lifestyle. Dishes from the Mediterranean Diet commonly feature ingredients that you may have growing in your garden like fresh tomatoes, garlic, aromatic herbs, and spices!
Meet your CSU Larimer County Extension Agent:
Laura Griffin is the Family and Consumer Science Agent for the Pueblo County Extension Office. Laura grew up in Pueblo and received both her BS and MS in Environmental Health from CSU. Currently, she teaches a variety of classes on food safety, food preservation, nutrition and health. In her spare time, Laura enjoys attending CSU football games, training her two Duck Tolling Retrievers and participating in the many outdoor activities Colorado has to offer.
